After spending five years working at Chandon in Australia’s Yarra Valley, Lynzee returned to her roots in the Okanagan, bringing with her the precision and innovation of traditional winemaking methods from across the globe.
I received to review their Brut Nature 2018 and their Brut Premiere 2020 traditional method sparkling wines. Let me tell you about these them.
My Wine Tasting Notes
Evolve Sparkling House Brut Nature 2018 (BC $49.99)
This wine won the All Canadian Wine Championships 2025 – Best Sparkling of the year, Trophy – Double Gold. Winemaker’s notes, “The blend comprises 50% Chardonnay, 40% Pinot Noir, and 10% Pinot Blanc, with each varietal undergoing separate fermentation before being artfully combined prior to bottling. The wine then experiences secondary fermentation in the bottle and is aged for an impressive 5 years on its lees, fostering the development of nuanced complexity and a luxuriously refined texture.”
Appearance: A clear, medium intensity lemon plus pear colour. This bottle wanted to make an extravagant appearance and did so, by popping the cork off as soon as I removed the wire cage! Finer bubbles in the glass.
Nose: Medium intensity aromas of crisp and bruised apples, plus lees.
Palate: This wine is dry, medium body with a mix of biting and creamy smaller bubbles. Crisp, tart and bruised apples on the palate, plus a touch of lemon peel bitterness. Deeper fruit flavours, reminding me of quality Champagne.
Finish: A medium-plus length finishing with bruised apples, some bitterness and tartness on the palate.

A BC alternative to a Champagne with deep flavours and fine bubble.

Evolve Sparkling House Brut Premiere 2020 (BC $39.99)
This wine won International Wine and Spirits Competition Silver Medal – May 2025. Winemaker’s notes, “…a harmonious blend of 67% Chardonnay and 33% Pinot Noir. The Chardonnay undergoes an extensive lees stirring regimen, enriching its complexity and imparting a luxurious creamy texture. Following fermentation, the blend is aged for over 3 years on its lees in the bottle, allowing the wine to develop intricate flavours of toasty brioche and indulgent creaminess, complemented by a refined, velvety mousse. The wine is finished with a hands-on artisanal disgorgement process, ensuring pristine clarity and elevating its elegant expression…”
Appearance: This wine has a medium intensity golden pear colour as well. Persistent, effusive, medium-sized bubbles in the glass.
Nose: Pronounced aromas of crisp and bruised apple, and touches of lees, toast, and lemon.
Palate: Dry, full-bodied, round, with pronounced flavours of apples, bruised apples, and pears, and a touch of toast. Tart flavours. The wine has creamy, medium-sized bubbles that fill your mouth.
Finish: A medium-plus length finishing with tart apple and some bitter apple skin flavours.
Rating: 



A very tasty, fruit-forward sparkling wine with medium-sized bubbles.
