It’s TIME to Enjoy Chronos Cabernet Sauvignon and Syrah 2020

We are halfway through the summer holidays if you have children in school, but we still have this month of August to enjoy being outside and having a bbq.  Here are two wines that would go nicely with a bbq from TIME Family of Wines, although these two wines are smooth enough that you could enjoy them with less heavy fare and with cheeses.  The two wines in question are their Chronos Cabernet Sauvignon 2020 and Chronos Syrah 2020.  Let me tell you about them.

My Wine Tasting Notes

TIME Family of Wines Chronos Cabernet Sauvignon 2020 (BC $39.99)

From the winery, the grapes were… “Carefully sorted and gently pressed, this wine saw a combination of French and American oak, 20% new oak.” 476 cases were produced.

Appearance: An opaque garnet colour, solid from rim to core.  Teardrops along the sides of the glass are evident from swirling.
Nose: Lighter aromas of toast, dark fruit, plums, and tea leaves. Maybe add a touch of floral with decanting.
Palate: Dry, medium-plus body and flavour intensity.  Lower acidity and medium-drying tannins.  Round with a smooth mouthfeel.  Dark fruit flavours, along with touches of capsicum, oak, charcoal, dark chocolate and oak.  Add tea leaves with some swirling in the glass.  The only difference I noted with decanting is the capsicum flavour disappears.
Finish: Medium-plus length finishing with firmer drying chalky tannins, dark fruit and oak.  Add pepperiness and tart fruit flavours with decanting.

Rating: 4.5 stars  A deep dark fruit-flavoured Cabernet Sauvignon that is not overly tannic. Round with a smooth mouthfeel. Approachable now, but can easily age 4-5 years.  No need to decant.

TIME Family of Wines Chronos Syrah 2020 (BC $39.99)

From the winery, “Our Syrah was fermented in 3 separate open top tanks with daily punch-downs. It was then pressed and put into a combination of French and American oak.”  403 cases were produced.

Appearance: An opaque ruby colour, solid from rim to core.  Teardrops along the sides of the glass are evident from swirling.
Nose: Medium intensity, inviting aromas of juicy blackberries, black fruit, along with lesser amounts of toast, oak, nutmeg, black pepper and tarriness. Lighter aromas after decanting, and no juicy blackberry scent.
Palate: This wine is dry with lighter body but fuller flavours.  Smooth and lean on the palate, but gets rounder with air.  Black plum, black fruit, black cherry and black pepper flavours, along with touches of floral and oak.  Light tannins and acidity.  The wine has sweeter fruit flavours after decanting and moves up to medium body.
Finish: A medium-plus length finishing with black fruit, black cherries and black pepper flavours.  Lightly drying tannins. No pepperiness after decanting.

Rating: 4.5 stars  An elegant light-bodied wine, but full of juicy dark fruit flavours.  Smooth mouthfeel with light tannins and acidity. No need to decant. Worth every penny.
