A glass of sparkling rosé wine and strawberries seems like a wonderful romantic pairing, doesn’t it? I received a bottle of BC Haywire Winery Pink Bub 2021 and recently purchased farm field-ripened strawberries and thought I would try this pairing. I can say they are definitely delicious together. Let me tell you about the wine and the pairing.
My Wine Tasting Notes
Haywire Winery Pink Bub 2021 (BC $29.99)
From the winery, “Pink Bub is made from 100% old vine Pinot Blanc grapes that were whole cluster pressed then fermented and aged in concrete tanks. Secondary fermentation occurred in horizontal Charmat tanks. Daily lees stirring for three months enhanced the density and palate weight of this fresh, lush sparkling wine. A drop of red wine was added for a lively pink hue.”
Appearance: A clear medium salmon colour. The wine produces lots of bigger bubbles forming a mousse in the glass when poured. The larger-sized bubbles stay in the glass after the mousse dissipates.
Nose: Medium-intensity aromas of red cherries and red berries plus toastiness, which can come from the red wine or from the whole cluster pressed Pinot Blanc grapes. I pick up lees and strawberry aromas after tasting the next day.
Palate: This wine is dry, fuller bodied, round with a thick mouthfeel and has creamy larger bubbles. Fresh tart red fruit and berries, plus some toastiness. Bright acidity. Light tannins. The acidity is tarter and you get more aggressive bubbles on the palate after tasting the next day.
Finish: A medium-plus length finishing with strawberries, red cherries, tart red fruits, plus creamy bubbles and light tannins. You get about the same finish to this wine the next day.
Rating:
As it is strawberry season in BC, why not try them with sparkling rosé wine? I did and enjoyed the pairing. You get sweetness and juicy berry flavour from the strawberry. The acidity and the bubble in the wine balanced the sweetness, plus the strawberry flavour brought out the red fruit flavour in the wine.
