Sparkling wine is very versatile to pair with food. It also makes any occasion seem more celebratory. I have two sparkling wines from Okanagan Crush Pad’s Haywire Winery. Their Haywire Vintage Bub 2014 and Haywire The Bub 2017. The Vintage Bub is made with 50% Pinot Noir and 50% Chardonnay grapes. After 5 years of aging en tirage, the wine was disgorged and spent further aging in the bottle. Their The Bub 2017, named after their daughter Alison, aka The Bub in her early years, is made of 45% Chardonnay and 55% Pinot Noir and has 2 years of aging en tirage before being disgorged. The primary fermentation was partly in stainless steel tanks and partly in concrete vessels for this wine. Both have crisp fresh fruit flavours which I think would go nicely with fish, poultry, and pork dishes, which you may be serving this Easter long weekend. You can also enjoy these two sparkling wines on your patio, if we have have a sunny day. Let me tell you about these wines.
My Wine Tasting Notes
Haywire The Bub 2017 (BC $32.99)
Appearance: A medium-plus golden colour in the glass.
Nose: Medium intensity fresh stone fruit aromas.
Palate: Dry, higher acidity and body and pronounced flavours of crisp and bruised apple followed by pears. Medium-sized crisp bubble.
Finish: Medium length finishing with pears and some pear skin flavours.

Haywire Vintage Bub 2014 (BC $49.99)
Appearance: Medium-plus bright lemon colour.
Nose: Medium-plus evolving aromas of lees, biscuit, and lemon.
Palate: Dry, higher acidity and body, and pronounced flavours of crab apple and pears. A touch of pepperiness, floral, and oak flavours as well. A mix of smaller creamy and biting bubbles.
Finish: Medium length. with apple and pears flavours.
