Windrush Estate Winery Dry Riesling 2019

You may or may not have seen my story and/or reel from yesterday – but I got an air fryer which I’m super pumped about and the first thing I decided to make were stuffed zucchini blossoms (if you know me, you won’t be shocked at this).

Anyway – in trying to decide what wine to pair with this snack, my mind immediately went to a dry Riesling.

Lucky for me, I had made a stop Windrush Estate Winery last week on our way home from the cabin where I had picked up a bottle of their 2019 Dry Riesling

Because I had stuffed the zucchini blossoms with an herby and peppery salty cheese mixture, the dryness of the Riesling really helped to accentuate the flavours in the filling.

On the wine, I got aromas of floral notes of acacia and blossoms, fruit notes of lime, pear and melon, and then a touch of minerality with some wet stones coming in on the finish.

The acidity on this Riesling was high, and I’m so confident that I could’ve cellared it for another 10 years without a problem. And now I’m thinking I really should’ve bought 2 (you’d think I would’ve learned my lesson by now).

Check out my IG reel from yesterday to see how the recipe came together.  Do you have an air fryer? Any recipes I should lookup?
