Sparkling wine is a pleasure, whether you are happy or sad, the sun is shining or rain is washing away summer’s leaves.  I had the pleasure of opening a bottle of Township 7 seven stars Aurora 2019 sparkling wine, for ClubSEVEN Members only.  This sparkling wine is a Blanc de Noir, made from 100% Pinot Noir fruit from Stoneridge Vineyard, now 25 years old, in Okanagan Falls.  According to the winery, “This elegant sparkling wine is named for the Goddess of Dawn, Aurora, who ancient Romans believed brought light to the heavens and earth, and whose tears created the sparkling morning dew. This vintage of seven stars Aurora is a single vineyard Blanc de Noir. The seven stars collection of sparkling wines are crafted in the classic Méthode Champenoise style.”  Let me tell you about it.

The wine was made with the 115 Pinot Noir clone. From the winery, “The grapes are picked with high natural acidity and lower sugars to allow for aging during extended time in bottle. The soil is a gravel, clay and sandy loam mix, providing the perfect drainage, along with installing a nice minerality character. The wine was left en tirage for 30 months to ensure the development of classic autolytic characters. After riddling we disgorged this wine and added a small amount of our proprietary dosage for complexity and depth of flavour.”

The winery suggests to “try with hors d’oeuvres such as Pacific scallops with an orange relish, or a peach, prosciutto and mascarpone canapé. Also delightful with main dishes such as macadamia nut-crusted halibut or goat cheese and mushroom risotto. ”  I agree.

Appearance: A bright, medium-intensity pear skin colour.  It has light medium-sized bubbles in the glass.
Nose: Medium-intensity aromas of pears with a hint of apples and orange blossom behind.
Palate: The wine is dry, but with a hint of sweetness, lighter bodied, but will medium-plus flavours and acidity.  Medium-sized creamy bubbles dance on your tongue.  Pears on the palate primarily along with touches of apple, orange blossom, and toast.
Finish: Medium-plus length finishing with mouthwatering acidity and pear flavour.
