It’s time for me to review an Okanagan, BC Chardonnay. Spring is here and summer is coming up. We will be enjoying salads from our gardens along with fresh seafood, and maybe grilled chicken. What wine to serve? How about TIME Family of Wines Chronos Chardonnay 2020? It is 100% stainless steel fermented and has vibrant acidity which I think will go well with these dishes. Here are my detailed notes on this wine.
My Wine Tasting Notes
TIME Family of Wines Chronos Chardonnay 2020 (BC $29.99)
Only 240 cases of this wine were produced. From the winery, “The 100% Chardonnay grapes were hand-sorted and whole bunch pressed. The wine was 100% stainless steel tank fermented and did not undergo malolactic conversion. The wine underwent weekly lees stirring for three weeks post ferment. The wine was not exposed to oak treatment. No fining.”
Appearance: A pale, bright straw colour.
Nose: Lighter, fresh fruit aromas of lemons, oranges, peach, and apples with swirling. The crisp apple aroma comes to the forefront with decanting. You still get the peach, orange, and lemon aromas as well.
Palate: Tastes off-dry (1.6g/l RS), but is from the fresh fruit flavours, not sugar. This is a dry wine, with a medium-plus body, a thick and round mouthfeel. It also has higher acidity that leaves a strong acidic prickle in your mouth to start but then lessens and the wine smoothens mid-palate. Lemon and crisp apple flavour primarily, with a touch of peach and some grape stem toward the finish. The acidity feels stronger with decanting and is more persistent through the sip. The wine does also have a less thick mouthfeel. Peach and crisp apple flavours predominate, but you still get the lemon and grape stem.
Finish: A medium length finishing with peach and tart citrus flavours, plus lemon pith. About the same finish and flavours with decanting.
A quality wine, one that can age for 3-5 years with its higher acidity. A wine that you can enjoy now with fresh BC halibut that is now in season. I’d bake the halibut with onion, artichoke hearts, and oregano in olive oil.
