Back after a few days in the woods and since I’ve been on a bubbly kick lately, it really should come as no surprise that one of the wines I packed for the getaway was a rosé bubbly.

This one is a local beauty from Hinterland Wine Co. in Prince Edward County, Ontario. 

They specialize in sparkling wine, and the one I choose to pack along was their 2016 Rosé Bubbly, which is a blend of Pinot Noir and Chardonnay. They use the traditional method (the same method as they do in Champagne) to create those bubbles we all know and love.

This sparkling wine was the most gorgeous shade of copper and I got aromas of strawberry, raspberry, rhubarb, and pastry dough, it is so divine.
